I came across this on the almighty interwebs. I summed it down and took my own screenshots.
First and foremost, download Recourse Hacker, it is a "freeware utility to view, modify, rename, add, delete and extract resources in 32bit Windows executables and resource files (*.res). It incorporates an internal resource script compiler and decompiler and works on Win95, Win98, WinME, WinNT, Win2000 and WinXP operating systems."

Step One - Modifying Explorer.exe
Explorer.exe is located on X:\Windows. X being your drive letter.
First step is to make a backup of Explorer.exe. Highlight Explorer.exe, press Control C, go to your desktop, and press Control V.
Open up ResHacker.exe. Go to File>Open. go to X:\Windows, Open Explorer.exe.

Click + on String Table, And go down to number 37, and click +, click 1033.

On line 578, it says "Start". Take out the word Start only, keep the quotations. Put in what you want.

Click Compile Script. Go to File > Save As... And save it as something like "Explorer2D.exe"
http://img205.imageshack.us/img205/200/explorervp0.png
Save.
Step 2 – Modifying the Registry
http://img233.imageshack.us/img233/9896/untitledcd3.png
Go to Start > Run. Type in Regedit. Click Ok.
Go to HKEY_LOCAL_MACHINE\ SOFTWARE\ Microsoft\ Windows NT\ CurrentVersion\ Winlogon
Double Click Shell on the right side.
http://img205.imageshack.us/img205/3663/untitledlo7.png
Type in the file you saved in step one, for me it was Explorer2D.exe. Press OK.
Now you can either log off, and log back on, restart, or end task to explorer in the task managers processes.
If you did it through task manager, which is the fastest way in my opinion, go back to the applications tab, and click New Task..

Type in your new explorer name. If My Documents comes up, and/or the taskbar didnt come up with the new text, you did it wrong.
Note: You need to have the Windows XP theme on for it to work.
